4 large potatoes, peeled and cubed

1 cup sharp cheddar cheese, grated

½ cup cream cheese, softened

¼ cup sour cream

3 tablespoons butter

1 small onion, finely chopped

2 garlic cloves, minced

1 teaspoon dried thyme

Salt and pepper to taste

1 pre-made pie crust (store-bought or homemade)

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Boil the Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.

      Sauté Onion and Garlic: In a skillet, melt 1 tablespoon of butter over medium heat. Sauté the chopped onion and minced garlic until they are soft and fragrant, about 5 minutes. Remove from heat and set aside.

        Mash the Potatoes: In the pot with the drained potatoes, add the remaining butter, cream cheese, sour cream, sautéed onion and garlic, thyme, salt, and pepper. Mash everything together until smooth and creamy. Stir in the grated cheddar cheese until well combined.

          Prepare the Pie: Roll out your pie crust and fit it into a 9-inch pie dish. Pour the creamy potato mixture into the crust, spreading it evenly.

            Bake the Pie: Bake in the preheated oven for 25-30 minutes, or until the top is golden and slightly crispy.

              Cool and Garnish: Once baked, remove from the oven and let it cool for about 10 minutes. Garnish with freshly chopped chives before serving.
