2 large ciabatta rolls

200g burrata cheese

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon balsamic vinegar

1 teaspoon fresh basil, chopped (plus extra for garnish)

1 clove garlic, minced

Salt and pepper to taste

Fresh arugula or spinach leaves

Optional: 1 tablespoon pesto for added flavor

Prepare the Cherry Tomato Confit:

    - In a medium skillet, heat 2 tablespoons of olive oil over medium heat.

      - Add the halved cherry tomatoes, minced garlic, salt, and pepper.

        - Sauté for about 8-10 minutes until the tomatoes are softened and start to break down.

          - Stir in the balsamic vinegar and fresh basil. Cook for an additional 2 minutes, then remove from the heat and set aside.

            Assemble the Sandwich:

              - Cut the ciabatta rolls in half horizontally. You can toast them lightly if you prefer a crispy texture.

                - Spread a layer of pesto on one side of each ciabatta half if using.

                  - On the bottom half of each roll, place a generous amount of fresh arugula or spinach.

                    Add Burrata:

                      - Carefully slice open the burrata cheese and place half of it on top of the greens on each sandwich.

                        - Gently spread the creamy inside of the burrata, ensuring it creates a rich layer.

                          Top with Tomato Confit:

                            - Spoon the sweet cherry tomato confit over the burrata, ensuring to include some of the flavorful oil from the skillet.

                              Final Touches:
