2 cups mashed potatoes (preferably leftover)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup finely chopped green onions

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon paprika

1/2 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko or regular)

Instructions
 

In a large bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan, chopped green onions, garlic powder, black pepper, and paprika. Mix well until all ingredients are thoroughly combined.

    Add the flour to the potato mixture and stir until incorporated. Fold in the eggs, mixing until the mixture is smooth and slightly sticky.

      Using a tablespoon, scoop out portions of the mixture and shape them into small balls or patties, about the size of a golf ball.

        Roll each ball in breadcrumbs until fully coated, then place them on a baking sheet lined with parchment paper.

          Heat oil in a deep skillet or fryer to about 350°F (175°C). Fry the cheese puffs in batches, ensuring not to overcrowd the pan, for about 3-4 minutes on each side or until they are golden brown and crispy.

            Remove the puffs with a slotted spoon and place them on paper towels to drain excess oil.

              Serve warm alongside your favorite dipping sauce or a dollop of sour cream.
