4 large eggs

1 cup cherry tomatoes, halved

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup fresh spinach, roughly chopped

1/2 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

Fresh basil leaves (for garnish)

Preheat your oven to 375°F (190°C).

    In an oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it's translucent, about 5 minutes.

      Stir in the minced garlic, and cook for another minute until fragrant.

        Add the halved cherry tomatoes and cook for about 3-4 minutes, until they begin to soften.

          Toss in the spinach, dried oregano, red pepper flakes (if using), salt, and black pepper. Cook, stirring, until the spinach is wilted and everything is well combined, about 2 minutes.

            Create four small wells in the vegetable mixture and crack an egg into each well.

              Sprinkle grated Parmesan cheese evenly over the eggs and vegetables.

                Carefully transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the egg whites are set but yolks are still slightly runny, or to your desired doneness.

                  Once baked, remove from the oven and let it cool for a minute before serving.

                    Garnish with fresh basil leaves and an extra drizzle of olive oil if desired.
