Ingredients

2 cups all-purpose flour

1/2 cup unsalted butter, softened

1/4 cup granulated sugar

1/4 teaspoon salt

1 egg yolk

1/4 cup sour cream

1 teaspoon vanilla extract

1 cup finely chopped walnuts or pecans

1/2 cup powdered sugar

1 tablespoon milk (for glazing)

Instructions

Prepare the Dough: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg yolk, sour cream, and vanilla extract, mixing until well combined.

Combine Dry Ingredients: In another bowl, sift together the flour and salt. Gradually add the dry mixture to the creamed mixture, stirring until just combined. Gather the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Nut Filling: While the dough is chilling, mix the chopped walnuts (or pecans) with powdered sugar in a small bowl. Set aside.

Roll Out the Dough: Preheat your oven to 350°F (175°C). On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick.

Fill and Shape the Cookies: Cut the rolled dough into strips approximately 2 inches wide. Place a tablespoon of the nut filling at one end of each strip. Roll the dough over the filling, pinching the edges to seal. Place the cookies seam-side down on a parchment-lined baking sheet.

Bake: Bake the cookies for 15-20 minutes, or until they are lightly golden. Remove from the oven and allow them to cool slightly.

Glaze the Cookies: In a small bowl, whisk together powdered sugar and milk to make a glaze. Drizzle the glaze over the warm cookies for added sweetness.

Serve and Enjoy: Let the cookies cool completely before serving. These delightful nut roll cookies are perfect for sharing with family and friends!
