2 cups all-purpose flour

1/2 teaspoon baking soda

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

1/2 cup honey

3 large eggs

1/2 cup buttermilk

1-2 fresh jalapenos, finely chopped (seeds removed for less heat)

1/2 cup shredded cheddar cheese (optional)

1/4 cup sliced almonds (for topping)

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or cooking spray.

    In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until well combined.

      In a large mixing bowl, cream the softened butter and honey together using an electric mixer until light and fluffy (about 3 minutes).

        Add the eggs one at a time, mixing well after each addition.

          Slowly add the buttermilk to the wet mixture and mix until fully incorporated.

            Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

              Fold in the chopped jalapenos and shredded cheddar cheese if using.

                Pour the batter into the prepared loaf pan, spreading it evenly. Top with sliced almonds for added crunch.

                  Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

                    Once baked, let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
