Ingredients

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 large ripe peach, pitted and diced

1-2 jalapenos, diced (remove seeds for less heat)

1 tablespoon olive oil

2 tablespoons honey

1 tablespoon lime juice

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Skewers (soaked in water if wooden)

Instructions

In a large bowl, combine the olive oil, honey, lime juice, smoked paprika, garlic powder, salt, and pepper. Whisk until well combined.

Add the chicken pieces to the marinade, ensuring they are fully coated. Let them marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).

Preheat your grill or grill pan over medium-high heat.

After marinating, thread the chicken pieces onto the skewers, alternating with diced peach and jalapeno for a colorful presentation. Aim for 3-4 pieces of chicken per skewer.

Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice char marks. The peaches should be slightly caramelized.

Remove from the grill and let rest for a few minutes before serving.

              Prep Time: 30 minutes | Total Time: 45 minutes | Servings: 4

                - Presentation Tips: Serve the skewers on a platter drizzled with additional honey and a sprinkle of fresh cilantro for a vibrant look. Accompany with lime wedges for an extra zing!
