8 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/4 cup chopped fresh cilantro

1/4 cup diced jalapeños (fresh or pickled)

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (Panko or regular)

2 large eggs, beaten

Vegetable oil for frying

Instructions
 

In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, chopped cilantro, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until everything is well incorporated and forms a thick mixture.

    Using your hands, form the mixture into small balls, about the size of a golf ball. Arrange the cheese balls on a plate or baking sheet lined with parchment paper.

      Set up a breading station: In one bowl, place the beaten eggs. In another bowl, pour the breadcrumbs.

        Dip each cheese ball into the beaten eggs, ensuring it is evenly coated, and then roll it in the breadcrumbs until fully covered. Place the breaded cheese balls back on the parchment-lined sheet.

          In a deep frying pan or pot, heat about 2-3 inches of vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it sizzles and browns, it's ready.

            Carefully add the cheese balls to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes, or until they are golden brown, turning them occasionally for even cooking.

              Once cooked, remove the cheese balls with a slotted spoon and let them drain on a paper towel-lined plate.

                Serve the Jalapeño Popper Cheese Balls warm with your favorite dipping sauce, such as ranch dressing or sriracha.
