1 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/2 cup diced jalapenos (fresh or pickled, seeds removed for less heat)

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

12 egg roll wrappers

Oil for frying (vegetable or peanut oil works well)

Ranch dressing (for dipping)

Instructions
 

In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapenos, green onions, garlic powder, smoked paprika, salt, and pepper. Mix until all ingredients are well combined and creamy.

    Lay out an egg roll wrapper on a clean surface, with one corner facing you. Place about 2 tablespoons of the jalapeno cheese mixture in the center of the wrapper.

      Fold the bottom corner up over the filling, then fold the side corners inward towards the center. Roll the wrapper tightly away from you, sealing the edges with a little water to ensure they stick.

        Repeat the process with the remaining egg roll wrappers and filling, placing the finished rolls seam-side down on a plate.

          Heat about 2 inches of oil in a deep frying pan over medium heat until hot (350°F/175°C).

            Carefully place 3-4 egg rolls in the hot oil, frying for about 3-4 minutes on each side or until golden brown and crispy. Adjust the heat as necessary to prevent burning.

              Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

                Serve the jalapeno popper egg rolls hot with ranch dressing for dipping.
