2 cups all-purpose flour

1/2 cup powdered sugar

1/2 cup granulated sugar

3/4 cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup of your favorite jam (strawberry, raspberry, or apricot work great)

Optional: Powdered sugar for dusting

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

      In a large bowl, cream together the softened butter, powdered sugar, and granulated sugar until light and fluffy.

        Add the egg and vanilla extract to the butter mixture, beating until well combined.

          Gradually add the dry flour mixture to the wet mixture, stirring just until combined and a soft dough forms.

            Take about a tablespoon of dough and roll it into a ball. Place the cookie ball on the prepared baking sheet, spacing them about 2 inches apart.

              Using your thumb or the back of a spoon, create an indentation in the center of each cookie.

                Fill each indentation with approximately half a teaspoon of jam, being careful not to overfill as it may spill out during baking.

                  Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.

                    Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

                      If desired, dust cooled cookies with powdered sugar before serving.
