Ingredients
  

2 cups long-grain rice

3 medium tomatoes, blended into a puree

1 red bell pepper, blended with tomatoes

1 medium onion, chopped (plus 1 for the garnish)

3 cloves garlic, minced

1 inch fresh ginger, grated

1 cup vegetable broth or water

1 cup tomato sauce

2 tablespoons tomato paste

1 tablespoon paprika

1 teaspoon thyme

1 teaspoon curry powder

1-2 teaspoons chili powder (adjust to taste)

Salt to taste

1 cup mixed vegetables (carrots, peas, and green beans)

1/4 cup vegetable oil

Optional: sliced avocado or fried plantains for serving

Instructions
 

Begin by rinsing the rice under cold water until the water runs clear, then set aside to drain thoroughly.

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.

      Stir in the minced garlic, grated ginger, and blended tomato and red bell pepper mixture. Cook for about 10-15 minutes until the mixture reduces and thickens slightly.

        Add the tomato sauce, tomato paste, paprika, thyme, curry powder, and chili powder to the pot. Mix well and allow to simmer for an additional 10 minutes.

          Pour in the vegetable broth or water, and season with salt to taste. Bring to a simmer, then add the rinsed rice. Stir to combine.

            Cover the pot with a tight-fitting lid, reduce the heat to low, and let it cook for about 20-25 minutes. Avoid removing the lid frequently to ensure even cooking.

              Once the rice is cooked and has absorbed all the liquid, fluff it gently with a fork and fold in the mixed vegetables. Let it sit for another 5 minutes with the lid on.

                Serve the Jollof rice hot, garnished with finely chopped onions and, optionally, slices of avocado or fried plantains on the side.
