8 ounces semi-sweet chocolate, melted and cooled

1 teaspoon instant coffee granules (optional, for depth of flavor)

2 tablespoons hot water (to dissolve coffee granules)

Prepare the Crust: In a medium bowl, combine the chocolate cookie crumbs and melted butter until the mixture resembles wet sand. Press this mixture evenly into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator while you prepare the filling.

    Make the Cream Cheese Mixture: In a mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
