Kielbasa Gnocchi Soup

Ingredients
  

1 lb kielbasa, sliced into thin rounds

1 package (16 oz) gnocchi (store-bought or homemade)

4 cups vegetable broth

1 cup milk (or plant-based alternative)

2 cups kale, chopped

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

1 medium potato, peeled and diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and carrots, and sauté for about 5 minutes until the onion is translucent.

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the sliced kielbasa to the pot, cooking until browned, about 5-7 minutes.

        Pour in the vegetable broth and bring to a boil. Add the diced potato and dried thyme, then reduce the heat and let simmer for 10 minutes.

          Once the potatoes are just tender, add the gnocchi to the pot. Cook according to the gnocchi package instructions, usually around 2-3 minutes until they float to the surface.

            Stir in the chopped kale and milk, and let it simmer for another 2-3 minutes until the kale wilts and the soup is heated through.

              Season the soup with smoked paprika, salt, and pepper to taste. Adjust flavors as desired.

                Serve the soup hot, garnished with fresh parsley on top.
