Ingredients

1 lb ground beef (or ground turkey for a lighter option)

1/4 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon gochujang (Korean chili paste)

1 teaspoon sugar

Salt and pepper to taste

1 tablespoon sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang

1 teaspoon lime juice

1 teaspoon honey (optional)

Salt to taste

Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the meatball mixture: In a large mixing bowl, combine the ground meat, breadcrumbs, green onions, minced garlic, minced ginger, soy sauce, sesame oil, gochujang, sugar, and a pinch of salt and pepper. Mix until all ingredients are well incorporated, being careful not to overmix.

Form the meatballs: Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

Bake the meatballs: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and lightly browned on the outside.

Make the spicy mayo dip: While the meatballs are baking, whisk together the mayonnaise, gochujang, lime juice, honey (if using), and a sprinkle of salt in a small bowl until smooth. Adjust the seasoning to taste.

Garnish the meatballs: Once the meatballs are cooked, take them out of the oven and sprinkle with sesame seeds for an added crunch.

Serve: Arrange the meatballs on a serving platter alongside a bowl of the spicy mayo dip.

                Prep Time: 15 min | Total Time: 40 min | Servings: 4-6
