1 lb ground beef (preferably 80/20 for extra flavor)

3 tablespoons soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

3 cloves garlic, minced

1 teaspoon ginger, grated

½ teaspoon red pepper flakes (adjust for spice level)

2 green onions, chopped (plus more for garnish)

1 cup shredded carrots

1 cup broccoli florets

2 cups cooked rice (white or brown)

Sesame seeds for garnish

Optional: Kimchi for serving

Cook the Ground Beef: In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-6 minutes. Drain any excess fat.

    Make the Sauce: In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and red pepper flakes.

      Combine Beef and Sauce: Pour the sauce over the cooked ground beef. Stir well to combine and let simmer for another 2-3 minutes, allowing the beef to absorb the flavors.

        Add Vegetables: Toss in the shredded carrots and broccoli florets, stirring until they are just tender (about 3-4 minutes). If needed, you can add a splash of water to help steam the broccoli.

          Prepare the Rice: Meanwhile, prepare your rice according to package instructions if you're not using leftovers.

            Assemble the Bowls: Place a generous scoop of rice in each bowl. Top with a hearty portion of the Korean ground beef mixture.

              Garnish and Serve: Sprinkle chopped green onions and sesame seeds on top for added flavor. Serve with kimchi on the side if desired.
