1 lb ground beef (preferably 80/20 for flavor)

2 tablespoons soy sauce

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon brown sugar

3 cloves garlic, minced

1-inch piece ginger, minced

1/4 cup green onions, chopped (plus extra for garnish)

1 cup cooked jasmine or sticky rice (for serving)

1/2 cup shredded carrots

1/2 cup sliced cucumber

Sesame seeds (for garnish)

Fried eggs (optional, for serving)

Instructions
 

Prepare the Marinade: In a medium bowl, combine soy sauce, gochujang, sesame oil, brown sugar, minced garlic, and ginger. Mix well until the sugar is dissolved.

    Cook the Beef: In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Add Marinade: Drain excess fat from the beef, and then reduce the heat to medium. Pour the marinade over the cooked beef, stirring well to coat all the meat. Cook for an additional 3-5 minutes until the sauce thickens slightly and is well incorporated.

        Prepare the Bowl: In serving bowls, layer cooked jasmine rice on the bottom. Top the rice generously with the Korean ground beef mixture, and then add shredded carrots and sliced cucumbers on the side.

          Garnish: Sprinkle chopped green onions and sesame seeds over the top. If desired, add a fried egg on top for extra flavor and richness.
