Ingredients
  

1 lb (450g) ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups beef broth

2 cups water

2 teaspoons dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

8-10 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

In a large pot over medium heat, add the ground beef or Italian sausage. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add the diced onion and minced garlic to the pot. Sauté for another 3-4 minutes until the onion is translucent.

      Pour in the crushed tomatoes, beef broth, and water. Stir to combine.

        Season the mixture with oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a simmer and cook for about 10 minutes.

          Add the broken lasagna noodles to the soup. Cook according to the package instructions, usually about 8-10 minutes, until they are tender.

            While the noodles are cooking, in a separate bowl, combine the ricotta cheese with a pinch of salt and pepper.

              Once the noodles are done, remove the pot from heat. Stir in the mozzarella cheese until melted and fully integrated.

                Serve the soup hot, adding a dollop of the ricotta mixture on top of each bowl. Sprinkle with grated Parmesan and fresh basil for garnish.
