Ingredients

2 slices of your favorite bread (sourdough, multigrain, etc.)

1 cup leftover mac 'n' cheese

4 strips of cooked bacon, crumbled

1/2 cup cheddar cheese, shredded

2 tablespoons butter

Salt and pepper to taste

Optional: a pinch of garlic powder or onion powder for extra flavor

Instructions

Prepare the Filling: In a mixing bowl, combine the leftover mac 'n' cheese with crumbled bacon and shredded cheddar cheese. Add a pinch of salt and pepper (and optional garlic or onion powder) to enhance the flavor. Mix well until fully incorporated.

Assemble the Sandwich: Place one slice of bread on a clean surface. Spread half of the mac 'n' cheese filling evenly on the slice, then top with the second slice of bread.

Butter the Bread: Spread 1 tablespoon of butter on the outer side of the sandwich. Repeat with the other side once the sandwich is flipped.

Grill the Sandwich: Heat a non-stick skillet over medium heat. Carefully place the sandwich in the skillet, buttered side down. Grill for about 3-4 minutes or until the bottom is golden brown and crispy.

Flip and Cook: Using a spatula, carefully flip the sandwich over. Add the remaining tablespoon of butter to the skillet and butter the top side of the sandwich as it cooks. Grill for another 3-4 minutes until golden and the cheese is melted inside.

Serve: Once both sides are crispy and golden brown, remove the sandwich from the skillet. Let it cool for a minute, then slice in half and serve hot. Optional: pair with your favorite dipping sauce or a side of pickles for extra crunch!
