12 large jalapeños

2 cups leftover mac 'n' cheese

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup panko breadcrumbs

Cooking spray or olive oil for drizzling

Instructions
 

Prep the Jalapeños: Preheat the oven to 375°F (190°C). Cut each jalapeño in half lengthwise and remove the seeds and membranes (use gloves to avoid irritation).

    Make the Filling: In a mixing bowl, combine the leftover mac 'n' cheese, shredded cheddar, cream cheese, green onions, garlic powder, smoked paprika, salt, and pepper. Mix until well combined and creamy.

      Stuff the Jalapeños: Spoon the mac 'n' cheese mixture generously into each jalapeño half, pressing slightly to pack it in.

        Prepare for Baking: Place the stuffed jalapeños on a baking sheet lined with parchment paper. In a small bowl, mix panko breadcrumbs with a drizzle of olive oil, then sprinkle the mixture on top of each stuffed jalapeño for added crunch.

          Bake: Spray or drizzle a little cooking spray/olive oil over the jalapeños. Bake in the preheated oven for about 20-25 minutes, or until the jalapeños are tender and the tops are golden brown.

            Serve: Remove from the oven and let cool slightly. Serve warm with a side of ranch or your favorite dipping sauce.
