2 cups leftover turkey, shredded

1 cup tikka masala sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup bell peppers, sliced (any color)

4 large flour tortillas

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Instructions
 

In a medium bowl, combine the shredded turkey with the tikka masala sauce, mixing until the turkey is well coated.

    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced red onion and bell peppers, sautéing until they are soft and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.

      In the same skillet, add another tablespoon of olive oil. Place one tortilla in the skillet, and spread half of the turkey and tikka masala mixture evenly over it. Sprinkle half of the shredded mozzarella cheese on top, followed by half of the sautéed vegetables.

        Carefully place a second tortilla on top and cook for about 3-4 minutes, or until the bottom tortilla is golden brown. Flip the quesadilla using a large spatula and cook for another 3-4 minutes on the other side, until it’s crispy and the cheese has melted.

          Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling.

            Cut each quesadilla into wedges and garnish with fresh cilantro. Serve hot with a side of sour cream or Greek yogurt for dipping.
