1 cup unsalted butter, softened

1 cup powdered sugar, plus more for dusting

2 cups all-purpose flour

1/2 teaspoon salt

1/4 teaspoon baking powder

1 large egg

Zest of 2 lemons

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

1 cup granulated sugar

1 tablespoon cornstarch

Powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

    In a large mixing bowl, cream together the softened butter and 1 cup of powdered sugar until light and fluffy.

      Gradually sift in the all-purpose flour, salt, and baking powder. Mix until just combined; the dough will be slightly crumbly.

        Press the cookie dough evenly into the prepared baking pan using your fingers or a spatula. Bake for 18-20 minutes or until the edges are lightly golden.

          While the cookie base is baking, prepare the lemon filling. In a separate bowl, whisk together the granulated sugar, cornstarch, fresh lemon juice, lemon zest, and the egg until smooth and well combined.

            Once the cookie base is done, remove it from the oven and immediately pour the lemon filling over the hot cookie crust.

              Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set but still has a slight jiggle in the center.

                Remove from the oven and let it cool completely in the pan on a wire rack.

                  Once cooled, dust the top with powdered sugar and cut the bars into squares or rectangles.
