Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the melted butter, lemon juice, lemon zest, minced garlic, parsley, salt, and pepper until well combined.
Place the cod fillets skin-side down in a baking dish. Drizzle half of the lemon butter mixture over the cod, making sure each fillet is well coated.
Bake in the preheated oven for 12-15 minutes or until the fish flakes easily with a fork.
Halfway through baking, drizzle the remaining lemon butter mixture over the cod for an extra burst of flavor.
Once done, remove from the oven and let it sit for a minute.
Serve the cod hot, garnished with lemon wedges and capers for an additional tangy flavor if desired.
Notes
Serve with steamed vegetables or a light salad for a complete meal.
