4 cod fillets (about 6 ounces each)

4 tablespoons unsalted butter

2 tablespoons olive oil

2 cloves garlic, minced

Zest and juice of 1 lemon

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Start by patting the cod fillets dry with paper towels. Season both sides liberally with salt and pepper.

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until the butter melts and starts to foam.

      Carefully place the seasoned cod fillets in the skillet. Sauté for about 4-5 minutes on each side, or until the cod is golden brown and flakes easily with a fork. Once cooked, transfer the fillets to a warm plate and cover with foil to keep warm.

        In the same skillet, reduce the heat to low and add the remaining 2 tablespoons of butter. Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn the garlic.

          Add the lemon zest, lemon juice, and thyme to the skillet, stirring to combine. Let it simmer for a minute to blend the flavors.

            Return the sautéed cod to the skillet, spooning the lemon butter sauce over the fillets. Cook for an additional minute to warm through.

              Remove from heat and garnish with fresh parsley before serving.
