3 large eggs

1/2 cup buttermilk

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 1 lemon

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

Pinch of turmeric (for color, optional)

Preheat the oven to 350°F (175°C). Place your unbaked pie crust in a 9-inch pie dish, crimping the edges if desired.

    In a large mixing bowl, whisk together the granulated sugar, flour, and salt until well combined.

      Add the eggs to the dry mixture, whisking until smooth and combined.

        Pour in the buttermilk, lemon juice, lemon zest, melted butter, and vanilla extract. If using, add a pinch of turmeric for a vibrant color. Continue whisking until the mixture is fully blended and slightly frothy.

          Pour the lemon filling into the prepared pie crust, spreading it evenly with a spatula.
