1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

6 cups low-sodium chicken broth

1 pound boneless chicken breast, cut into bite-sized pieces

1 cup uncooked orzo pasta

1 cup frozen peas

Juice and zest of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until soft and translucent.

    Stir in the minced garlic, diced carrots, and diced celery. Sauté for an additional 5 minutes until the vegetables begin to soften.

      Sprinkle in the dried thyme and oregano, stirring to coat the vegetables in the spices.

        Pour in the chicken broth and bring the mixture to a gentle boil.

          Add the bite-sized pieces of chicken to the pot, reducing the heat to a simmer. Cook for about 10 minutes, or until the chicken is cooked through.

            Stir in the uncooked orzo pasta and frozen peas. Simmer for another 7-10 minutes, or until the orzo is al dente.
