1/2 teaspoon baking powder

1/2 cup cream cheese, softened

1/4 cup unsalted butter, softened

1 large egg

1 tablespoon lemon zest (from about 1 lemon)

3 tablespoons fresh lemon juice

1/2 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

1/3 cup powdered sugar (for glaze)

1 tablespoon lemon juice (for glaze)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    In a medium bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.

      In a large mixing bowl, beat the softened cream cheese and butter together with a hand mixer or stand mixer until creamy and smooth.

        Add in the egg, lemon zest, fresh lemon juice, vanilla extract, and almond extract (if using) to the cream cheese mixture. Beat until everything is well incorporated.

          Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix; it’s okay if there are a few lumps.

            Divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center comes out clean.

                While the muffins are baking, prepare the glaze by whisking together the powdered sugar and fresh lemon juice in a small bowl until smooth.

                  Once the muffins are done, remove them from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
