1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup granulated sugar

1/2 cup cream cheese, softened

1/2 cup unsalted butter, melted

2 large eggs

1/4 cup fresh lemon juice

Zest of 1 lemon

1/2 teaspoon vanilla extract

1/4 cup milk

Optional: powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with non-stick spray.

    In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt until well combined. Set aside.

      In another large bowl, beat the softened cream cheese and melted butter together until the mixture is smooth and creamy.

        Add the granulated sugar to the cream cheese mixture and beat until well combined.

          Add the eggs one at a time, mixing well after each addition.

            Stir in the fresh lemon juice, lemon zest, and vanilla extract until everything is fully incorporated.

              Gradually add the dry flour mixture to the wet mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. Do not overmix!

                Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

                  Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                    Remove from the oven and allow to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

                      Optionally, dust with powdered sugar before serving for an extra touch of sweetness.
