Ingredients

1 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup unsalted butter, softened

1/2 cup cream cheese, softened

2 large eggs

1/4 cup milk

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon vanilla extract

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Cheese: In a large mixing bowl, use a hand mixer to beat the softened butter and cream cheese together until smooth and creamy.

Add Sugar and Eggs: Gradually add in the granulated sugar, mixing until well incorporated. Then add the eggs one at a time, beating well after each addition.

Incorporate Flavors: Stir in the lemon zest, lemon juice, and vanilla extract until combined.

Combine Wet and Dry: Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix gently until just combined (do not overmix).

Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake: Place the muffin tray in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Serve: Optionally, dust the cooled muffins with powdered sugar for an extra touch before serving.
