Ingredients
  

1 whole chicken (3-4 lbs)

4 tablespoons olive oil

4 cloves garlic, minced

Juice and zest of 2 large lemons

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper to taste

1 teaspoon paprika

1 lemon, sliced (for stuffing and garnish)

Fresh herbs for garnish (parsley or thyme)

Instructions
 

Preheat the oven to 425°F (220°C).

    In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, rosemary, thyme, paprika, salt, and pepper. This will create a flavorful marinade.

      Pat the chicken dry with paper towels and place it in a roasting pan.

        Carefully loosen the skin of the chicken over the breast and thighs without tearing it. Using your fingers, rub some of the marinade directly under the skin for maximum flavor.

          Rub any remaining marinade all over the outside of the chicken, making sure to coat it evenly.

            Stuff the cavity of the chicken with lemon slices and additional fresh herbs to infuse more flavor as it roasts.

              Tie the legs together with kitchen twine and tuck the wing tips under the body to promote even cooking.

                Roast the chicken in the preheated oven for about 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) when checked at the thickest part of the thigh.

                  For a crispy skin, switch to broil for the last 5-10 minutes, keeping a close eye to avoid burning.

                    Once cooked, remove the chicken from the oven and let it rest for 15 minutes before carving. This allows the juices to redistribute.

                      Carve the chicken and serve with the pan juices drizzled over the top. Garnish with additional fresh herbs if desired.
