In a large mixing bowl, combine the halved baby potatoes with olive oil, minced garlic, lemon zest, lemon juice, dried thyme, paprika, salt, and pepper. Toss until the potatoes are well-coated.
Spread the potatoes out in a single layer on a baking sheet. Ensure they're not crowded to allow for even roasting.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, stirring halfway through for even cooking.
Once cooked, remove from the oven and let them cool for a couple of minutes.
Garnish with chopped fresh parsley before serving.
