Ingredients

2 cans (about 5 oz each) tuna, drained

1 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup mayonnaise

1 egg, lightly beaten

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 garlic cloves, minced

1/4 cup green onions, finely chopped

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil for frying

Instructions

In a large mixing bowl, combine the drained tuna, breadcrumbs, mayonnaise, and beaten egg.

Add the fresh lemon juice, lemon zest, minced garlic, green onions, dried oregano, and season with salt and pepper.

Mix all ingredients thoroughly until well combined. If the mixture feels too wet, add a bit more breadcrumbs until you achieve a moldable consistency.

Form the mixture into patties, about 2-3 inches in diameter. You should get approximately 8-10 cakes.

Heat a large skillet over medium heat and add a generous drizzle of olive oil.

Once the oil is hot, carefully place the tuna cakes in the skillet, making sure not to overcrowd the pan.

Cook for about 4-5 minutes on each side, or until they’re golden brown and crispy.

Once done, transfer the cakes to a plate lined with paper towels to drain any excess oil.

                  Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4
