1 cup orzo pasta

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons lemon juice (freshly squeezed)

1 teaspoon lemon zest

Start by cooking the orzo pasta according to the package instructions in a pot of salted boiling water. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, finely chopped red onion, and chopped parsley.

      In a separate small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper until well blended.

        Add the cooled orzo pasta to the bowl with the vegetable mixture.

          Pour the vinaigrette over the orzo mixture and toss gently until all ingredients are evenly coated.
