2 boneless, skinless chicken breasts

1/4 cup grated Parmesan cheese

1/4 cup plain Greek yogurt

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

1/2 teaspoon garlic powder

Salt and pepper to taste

4 cups mixed greens (such as arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1/4 cup sliced almonds (toasted)

Fresh parsley for garnish

Instructions
 

Preheat your grill or stovetop grill pan over medium heat. Season the chicken breasts with salt, pepper, and a sprinkle of garlic powder.

    Grill the chicken for about 6-7 minutes on each side, or until cooked through and internal temperature reaches 165°F (75°C). Remove from heat and allow to rest for 5 minutes. Then slice the chicken into strips.

      In a mixing bowl, combine the grated Parmesan cheese, Greek yogurt, mayonnaise, Dijon mustard, lemon juice, lemon zest, garlic powder, and a pinch of salt and pepper. Whisk until smooth and creamy.

        In a large salad bowl, toss the mixed greens with the halved cherry tomatoes and sliced almonds.

          Add the sliced chicken to the salad and drizzle generously with the lemon Parmesan dressing. Toss gently to combine, ensuring all ingredients are coated.

            Serve immediately, garnished with fresh parsley and additional Parmesan if desired.
