1 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

2 tablespoons poppy seeds

1 large egg

½ cup Greek yogurt

¼ cup vegetable oil

1 tablespoon lemon zest

3 tablespoons fresh lemon juice

¼ teaspoon vanilla extract

Optional: Additional lemon zest and poppy seeds for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and poppy seeds until well combined.

      In a separate large bowl, mix the egg, Greek yogurt, vegetable oil, lemon zest, lemon juice, and vanilla extract until smooth and creamy.

        Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to overmix; lumps are okay.

          Spoon the batter into the muffin cups until they are about three-quarters full.

            Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean and the tops are lightly golden.

              Remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

                Optionally, garnish with additional lemon zest and poppy seeds before serving.
