2 cups all-purpose flour

1 teaspoon baking powder

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until the mixture is light and fluffy, about 3-4 minutes.

      Add in the egg, lemon zest, and lemon juice; mix until fully incorporated.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture while mixing on low speed until just combined.

          Gently fold in the raspberries using a spatula, taking care not to crush them.
