2 cans (15 ounces each) white beans, drained and rinsed

4 cups vegetable broth

2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

1 carrot, diced

2 celery stalks, diced

1 lemon, zested and juiced

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

Salt and black pepper, to taste

Fresh parsley, for garnish

Optional: 1 cup kale or spinach, chopped

In a large soup pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Stir in the minced garlic and chopped rosemary, cooking for an additional 1-2 minutes until fragrant.

      Add the drained white beans to the pot and mix well. Pour in the vegetable broth, lemon zest, and lemon juice, stirring to combine.

        Bring the soup to a gentle boil, then reduce heat and let it simmer for 15-20 minutes, allowing the flavors to meld together.

          If using, Stir in the chopped kale or spinach during the last 5 minutes of simmering.
