2 cans (15 oz) chickpeas, rinsed and drained

4 cups vegetable broth

1 small red onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 medium zucchini, diced

1 can (14 oz) diced tomatoes, with juices

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Juice of 2 lemons

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

Salt and pepper to taste

Crumbled feta cheese (optional, for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until softened.

    Add the minced garlic, diced carrots, and celery. Sauté for another 5 minutes until the vegetables are fragrant and slightly tender.

      Stir in the diced zucchini and cook for an additional 3 minutes.

        Add the rinsed chickpeas, vegetable broth, diced tomatoes, dried oregano, thyme, and smoked paprika. Bring the mixture to a gentle simmer.

          Allow the soup to simmer uncovered for 20-25 minutes, allowing the flavors to meld and the vegetables to cook through.

            Remove the pot from heat and stir in the lemon juice, salt, and pepper to taste.

              Before serving, mix in half of the fresh parsley and reserve some for garnish.

                Ladle the soup into bowls and top each serving with crumbled feta cheese, if desired, and a sprinkle of remaining parsley.
