2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, chilled and cubed

1/2 cup full-fat buttermilk

1/4 cup sour cream

1 tablespoon honey (optional for a hint of sweetness)

Extra flour for dusting

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the chilled and cubed butter into the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with some larger pieces for flakiness.

        In a separate bowl, whisk together the buttermilk, sour cream, and honey (if using) until smooth.

          Pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix – it’s okay if there are a few lumps!

            Turn the dough out onto a lightly floured surface. Gently knead the dough 5-6 times just until it comes together.

              Pat the dough into a rectangle about 1-inch thick. Fold the dough in thirds like a letter, then turn it 90 degrees and pat it down again to 1-inch thick. Repeat this process one or two more times to create layers.

                Using a round biscuit cutter, cut out biscuits and transfer them gently to the prepared baking sheet, placing them close together for soft sides.

                  Bake for 12-15 minutes, or until the tops are golden brown.

                    Allow to cool slightly on the baking sheet before transferring to a wire rack. Serve warm, with butter or your favorite jam!
