2 cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsalted butter, softened

3 large eggs

1 cup Greek yogurt

½ cup fresh lemon juice

Zest of 2 lemons

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon vanilla extract

1 cup powdered sugar

3 tablespoons fresh lemon juice (for glaze)

Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

    In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-5 minutes.

      Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and lemon zest. Mix until combined.

        In a separate bowl, combine the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the butter mixture, alternating with the Greek yogurt and fresh lemon juice. Begin and end with the dry ingredients, mixing until just combined.

            Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

              While the cake is baking, prepare the lemon glaze by whisking together the powdered sugar and fresh lemon juice in a small bowl until smooth.

                Once the cake is done, allow it to cool in the pan for 10 minutes before transferring it to a wire rack.

                  Drizzle the lemon glaze over the warm cake, allowing it to soak in and cool completely.
