2 cups all-purpose flour

½ cup almond flour

1 teaspoon ground cinnamon

½ teaspoon baking powder

½ teaspoon salt

¾ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup raspberry or strawberry jam (or any mixed berry jam)

Powdered sugar for dusting

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together all-purpose flour, almond flour, cinnamon, baking powder, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and granulated sugar using a mixer until light and fluffy.

        Beat in the egg and vanilla extract until well combined.

          Gradually add the dry flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

            Divide the dough into two equal halves, flatten them into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

              On a lightly floured surface, roll out one disc of dough to a thickness of about ¼ inch. Use a round cookie cutter to cut out cookies and transfer them to the prepared baking sheet.

                Cut a smaller shape (such as a heart or a star) in the center of half of the cookies to create the Linzer cookie top. Repeat with the second disc of dough.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow them to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.

                    Once cooled, spread a generous teaspoon of jam on the full cookies, then carefully place the cut-out cookies on top to create sandwiches.

                      Dust the assembled cookies with powdered sugar before serving.
