Ingredients
  

1 package of puff pastry (2 sheets, thawed)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup diced pepperoni

1/2 teaspoon garlic powder

1/2 teaspoon Italian herbs (oregano and basil)

Salt and pepper to taste

1 egg (for egg wash)

1 tablespoon olive oil (for brushing)

Instructions
 

Preheat your oven to 400°F (200°C).

    On a lightly floured surface, roll out the puff pastry sheets until they are slightly thinner.

      Cut each sheet into squares of about 4x4 inches.

        In a mixing bowl, combine ricotta cheese, mozzarella cheese, diced pepperoni, garlic powder, Italian herbs, salt, and pepper. Mix until smooth.

          Place a tablespoon of the cheese and pepperoni mixture in the center of each square of puff pastry.

            Fold the corners of the pastry squares over the filling to create a pocket. Pinch the edges to seal well, ensuring no filling escapes during baking.

              Place the filled puffs on a baking sheet lined with parchment paper.

                In a small bowl, whisk the egg and brush it over the tops of the puffs for a golden finish.

                  Drizzle olive oil over the tops for extra crispiness.

                    Bake in the preheated oven for about 20-25 minutes or until golden brown and puffed.

                      Once baked, remove from the oven, let cool slightly, and serve warm.
