4 large russet potatoes, peeled and cubed

1 medium onion, diced

3 cloves garlic, minced

6 cups chicken broth (or vegetable broth for a vegetarian option)

1 cup heavy cream

1 cup sharp cheddar cheese, shredded (plus extra for garnish)

½ cup sour cream (plus extra for garnish)

6 slices bacon, cooked and crumbled

4 green onions, sliced (for garnish)

Salt and pepper, to taste

2 tablespoons olive oil

2 teaspoons dried thyme

2 teaspoons smoked paprika

Instructions
 

Prepare the Potatoes: In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.

    Add the Broth and Potatoes: Stir in the cubed potatoes, chicken broth, dried thyme, and smoked paprika. Bring the mixture to a boil, then reduce heat to low and let simmer for about 20-25 minutes, or until the potatoes are fork-tender.
