4 large russet potatoes, peeled and grated

1 cup shredded cheddar cheese

½ cup chopped cooked bacon or turkey bacon

½ cup sour cream

¼ cup green onions, sliced

1 teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Optional: additional toppings like jalapeños, diced tomatoes, or avocado

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prep Potatoes: After grating the potatoes, place them in a clean kitchen towel and wring out as much moisture as possible. This helps achieve crispy hash browns.

      Mix Ingredients: In a large mixing bowl, combine the grated potatoes, garlic powder, onion powder, paprika, salt, and pepper. Toss well to evenly coat the potatoes in the seasonings.

        Add Cheese & Bacon: Stir in half of the shredded cheddar cheese and all of the cooked bacon. Mix until everything is well distributed.

          Cooking Process: Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the potato mixture and press it down to form a flat, even layer. Cook for about 5-7 minutes until the bottom starts to crisp up.

            Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes until the top is golden brown and crispy.

              Finishing Touches: Remove from the oven and immediately sprinkle the remaining cheddar cheese on top. Return it to the oven for another 5 minutes until the cheese is melted and bubbly.

                Top & Serve: Once out of the oven, dollop sour cream over the top, sprinkle with sliced green onions, and add any optional toppings you desire.
