2 lbs russet potatoes, peeled and chopped

1/2 cup sour cream

1/2 cup milk (or cream for extra richness)

1/4 cup butter, diced

1 cup shredded cheddar cheese

1/2 cup cooked bacon, chopped

1/4 cup green onions, sliced

Salt and pepper to taste

Optional: 1/2 cup cream cheese for added creaminess

Instructions
 

Boil the Potatoes: Place the chopped potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

    Drain and Steamer Dry: Once the potatoes are cooked, drain them well and return them to the pot. Let them sit for a few minutes to evaporate excess moisture.

      Mash the Potatoes: Using a potato masher or fork, begin mashing the potatoes until they reach your desired smoothness. For creamier potatoes, you can use a hand mixer.

        Mix in the Creaminess: Add sour cream, milk (or cream), butter, and cream cheese (if using) to the mashed potatoes. Mix until everything is well combined and creamy.

          Add Flavor: Stir in half of the shredded cheddar cheese, chopped bacon, and most of the green onions (reserve a small portion for garnish). Season with salt and pepper to taste. Mix gently to incorporate.

            Heat and Serve: Transfer the loaded mashed potatoes to a serving dish. Top with the remaining cheddar cheese and bake in a preheated oven at 350°F (175°C) for about 15-20 minutes, or until the cheese is melted and bubbly.
