8 ounces elbow macaroni

2 cups Brussels sprouts, trimmed and halved

4 slices bacon, diced

1 cup shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup panko breadcrumbs

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    Cook the Macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Prepare Brussels Sprouts: In a separate pot, add the halved Brussels sprouts and blanch them in boiling water for about 3 minutes. Drain, rinse in cold water, and set aside.

        Cook Bacon: In a skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on paper towels to drain.

          Make the Cheese Sauce: In the same skillet, add the butter and let it melt. Whisk in the flour for about 1-2 minutes until it’s lightly golden. Gradually whisk in the milk, garlic powder, onion powder, salt, and pepper. Cook until the mixture thickens and coats the back of a spoon.

            Add Cheese: Remove the sauce from heat and stir in the cheddar and Gruyère cheese until melted and smooth.

              Combine Ingredients: In a large mixing bowl, combine the cooked macaroni, blanched Brussels sprouts, and cheese sauce. Fold in the crispy bacon, ensuring everything is evenly coated.

                Prepare Breadcrumb Topping: In a small bowl, mix panko breadcrumbs with olive oil and a pinch of salt. Stir well to combine.

                  Assemble and Bake: Pour the macaroni mixture into a greased baking dish and top it with the breadcrumb mixture. Bake in the preheated oven for 25-30 minutes, or until the top is golden and crispy.

                    Serve: Let it cool for a few minutes before serving. Garnish with fresh parsley for added flavor and decoration.
