8 large eggs

1 cup whole milk

1 cup fresh spinach, roughly chopped

1 cup crumbled feta cheese

1 medium onion, diced

1 red bell pepper, diced

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup diced bread (day-old or toasted)

1/2 cup cherry tomatoes, halved

Olive oil for cooking

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.

    In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 5 minutes.

      Add the chopped spinach to the skillet and sauté for another 2-3 minutes until wilted. Remove from heat and let cool slightly.

        In a large mixing bowl, whisk together the eggs and whole milk until well combined. Stir in garlic powder, onion powder, salt, and pepper.

          Add the sautéed onion, bell pepper, spinach mixture, crumbled feta, diced bread, and halved cherry tomatoes to the egg mixture. Gently fold until everything is well coated.

            Pour the mixture into the prepared baking dish, spreading it out evenly.

              Cover with aluminum foil and bake in the preheated oven for 30 minutes.

                After 30 minutes, remove the foil and bake for another 15-20 minutes, or until the top is golden brown and the center is set.

                  Let it cool slightly before cutting into squares.

                    Serve warm or allow to cool completely, then refrigerate for up to 3 days.
