2 cups Mandarin orange segments (fresh or canned, drained)

1 cup pumpkin puree (canned or homemade)

1/2 cup oats (rolled or quick)

1/2 cup almond flour

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger (ground)

1/4 teaspoon salt

Optional toppings: chopped walnuts or pumpkin seeds, shredded coconut

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), and vanilla extract. Mix well until fully combined.

      Combine Dry Ingredients: In a separate bowl, mix together the oats, almond flour, cinnamon, nutmeg, ginger, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the Mandarin orange segments gently to ensure they remain intact.
