1.5 lbs pork tenderloin

¼ cup pure maple syrup

¼ cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika (optional, for a smoky flavor)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, olive oil, minced garlic, thyme, salt, pepper, and paprika until well combined.

    Marinate the Pork: Place the pork tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight. This will enhance the flavor.

      Preheat the Oven: When ready to cook, preheat your oven to 400°F (200°C).

        Sear the Pork: Remove the pork from the marinade (reserve the marinade for later). Heat a large oven-safe skillet over medium-high heat and add a little olive oil. Once hot, add the pork tenderloin and sear on all sides until golden brown, about 4-5 minutes.
