Ingredients

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 can (28 oz) crushed tomatoes (preferably San Marzano)

2 teaspoons dried oregano

1 teaspoon dried basil

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon sugar (to balance acidity)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions

In a large saucepan, heat the olive oil over medium heat.

Add the chopped onion and sauté for about 5 minutes, until translucent and fragrant.

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.

Pour in the crushed tomatoes and stir.

Add the oregano, dried basil, red pepper flakes, and sugar. Mix well to combine.

Season with salt and pepper to taste. Bring the sauce to a gentle simmer.

Reduce heat to low and let it simmer uncovered for about 20-30 minutes, stirring occasionally. The sauce should thicken, and the flavors will develop.

Once cooked, taste and adjust seasoning if needed.

Serve hot over your favorite pasta, garnished with fresh basil leaves and a sprinkle of Parmesan cheese if desired.
