4 boneless, skinless chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 medium onion, diced

2 cloves garlic, minced

1 cup orzo pasta

2 cups chicken broth

1 cup cherry tomatoes, halved

1 cup spinach, fresh

½ cup heavy cream

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Prepare the Chicken: Season the chicken thighs generously with salt, pepper, garlic powder, and Italian seasoning on both sides.

    Sear the Chicken: In a large skillet over medium heat, add olive oil. Once the oil is hot, add the chicken thighs. Sear for about 5-7 minutes on each side, or until golden brown. Remove chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes or until the onion becomes translucent.

        Add the Orzo: Pour in the orzo pasta, stirring to coat with the onion and garlic mixture. Cook for about 1 minute, allowing the pasta to lightly toast.

          Combine with Broth: Pour in the chicken broth and bring to a simmer. Carefully place the seared chicken thighs back into the skillet.

            Add Tomatoes and Spinach: Scatter the halved cherry tomatoes and fresh spinach around the chicken. Cover the skillet and let simmer for about 10-12 minutes, or until the orzo is al dente and has absorbed most of the broth.

              Creamy Finish: When the orzo is cooked, stir in the heavy cream and grated Parmesan cheese. Gently mix until everything is combined and creamy. Allow to simmer for an additional 2-3 minutes on low heat.
